Our KERAGUM range of LBG locust bean gum (E410), are extracted from the endosperm of the seeds of the endemic carob tree (Ceratonia Siliqua), native to the Mediterranean basin.
They are vegetable- based thickeners, stabilizers, emulsifiers and flavoring agents.

Our KERAGUM products complie with the specification of FAO/WHO, JEFCA, EU directives ( E410), Japanese Standard for Food Additives, FOOD CHEMICALS Codex and FDA.
They are also certified Kosher, Halal, and GMO free according to the International definitions and regulations.
Our KERAGUM range of locust bean gum (E410), are extracted from the endosperm of the seeds of the endemic carob tree (Ceratonia Siliqua), native to the Mediterranean basin. They are vegetable-based thickeners, stabilizers, emulsifiers and flavoring agents. They consist of high molecular weight galactomannans polysaccharides, that has the capacity to form very viscous solutions at relatively low concentrations, which are almost not affected by pH, temperature or salts.
The level required for their use is low, compared to their benefits, giving our products a place of choice for a wide range of applications : ice cream/milk, water ice, yogurt fruit, cream cheese, sauces, dressings, jelly products ..etc.

• Carob tree: essentially endemic, participate to stop desertification, small need of water and more often no fertilizers.
• Process: No use of chemicals, no effluents, low carbon footprint, 30% of renewable energy.
• By products: animal feed

• All natural, free from chemicals (clean labels)
• Neutral taste and odor (does not alter taste or nutritious of final product)
• Gives body and a creamy texture with a pleasant mouthfeel.
• Excellent syneresis control
• Reduces ice-crystal growth and give freeze-thaw stability
• Gelling agent and shows strong synergies to improve gel strength when combined with other Hydrocolloids (Carrageenan, Xanthan ..)
• Good stabilizing effect on proteins
• Increase shelf life
• Easy to process with and almost no interactions with other ingredients
• Sensorial aspects: appears as off-White with almost no odor, no off-flavour.
• Viscosity: 2000 - 3000 cps
• Negative to Salmonella, Coliforms, Starch, and Ethanol.
• Fats: max 1%
